Sunshine Wheat - Submitted by Brandon Musich

This recipe is a very suitable clone for the original New Belgium Brewing Sunshine Wheat beer – no longer brewed by NBB.  I emailed the brewer and while they couldn’t give me the exact recipe, he indicated that what I have shown here is within about 2% of what they used in their beer. 

This is an easy drinking, crisp, American Wheat (not hazy/cloudy like Hoegaarden or Blue Moon) with nice citrus notes from the bitter orange peel and the crushed coriander.  It may start out a little hazy given the high percentage of white wheat but it will definitely crash crystal clear once packaged over time.  

Get some fresh coriander seed and manually grind it in a coffee grinder or using a mortar and pestle for optimum flavor and aroma.  I have even used zest from local citrus in lieu of the standard dried bitter orange peel that you would get from your local homebrew shop.  Be sure to just use the zest and try and avoid using a lot of pith (the white part of the peel)  I add both the coriander and orange peel directly to the boil as indicated below.  It usually sits in the boil during knockout for at least 20 minutes while I transfer to the fermenter.  

I try and use a lower fermentation temp and a neutral ale yeast but I would imagine that a yeast variation such as a nice Saison yeast would work perfectly with this recipe as well if you’re looking for a little more spice or ester qualities from this beer.  

I have brewed this beer multiple times without using any rice hulls and not had any issues but your results may vary depending on many factors such as the level of crush on your grains and how fast you vorlauf/sparge which could result in a stuck grain bed.  

The salt additions for water adjustment can be left out completely or adjusted as you see necessary to fit your local water profile.  The minerals added are based on the assumption that you are using distilled water with a balanced water profile:
